Tom Kha Gai
This soup moves quickly once the aromatics are prepped. You are building a base that marries the heavy silkiness of coconut milk with the clean, sharp bite of citrus and Thai aromatics.
Respect the aromatics.
Do not skip the step of bruising the lemongrass and galangal. If you do not release their essential oils before they hit the pot, the broth will taste like flat coconut milk.

What goes in.
- 1 can (14 oz)full-fat coconut milk
- 2 cupschicken stock
- 1 lbchicken breast or thigh, sliced into bite-sized strips
- 3 inchesgalangal, sliced into thin coins
- 3 stalkslemongrass, bottom 4 inches only, smashed and cut into 2-inch pieces
- 6kaffir lime leaves, torn to release oils
- 4 ozoyster or straw mushrooms, torn by hand
- 3 tbspfish sauce
- 2 tbspfresh lime juice
- 1 tspthai chili paste (nam prik pao)
- handfulfresh cilantro, roughly chopped
Build the stock before the meat
Simmer the aromatics in the chicken stock for 5-7 minutes before adding the coconut milk. This creates a deeply flavored base that ensures the soup has character, not just creaminess.
The method.
Infuse the base
Bring chicken stock to a simmer with the galangal, lemongrass, and lime leaves. Let it bubble gently until the kitchen smells intensely citrusy.
Add coconut and chicken
Pour in the coconut milk. Once it returns to a light simmer, add the chicken strips. Do not let it boil hard, or the coconut milk may separate.
Add textures
Drop in the mushrooms. Cook for 3-4 minutes until the chicken is opaque and the mushrooms are tender.
Season and finish
Remove the pot from the heat. Stir in the fish sauce and lime juice. Add the chili paste for color and heat. Taste and adjust fish sauce if needed.
Serve
Ladle into bowls, ensuring everyone gets a piece of the aromatics (though these are not meant to be eaten). Top with fresh cilantro.

Replace the chicken entirely with an assortment of mushrooms like enoki, shiitake, and oyster for a lighter, earthier version.

Leave the galangal and lemongrass in the bowl. They are there to perfume the soup; push them to the side while eating.
If using canned coconut milk, stir the cream well before pouring if it has separated in the can.
Add the lime juice only after removing the pot from the heat to preserve its sharp, floral acidity.

Can I use ginger instead of galangal?
You can, but the flavor will be significantly more pungent and spicy. Galangal provides a unique, piney citrus note that ginger lacks.
How do I know the chicken is cooked through?
Because the chicken is sliced into thin strips, it will cook in about 3 minutes of gentle simmering. Once it is no longer pink in the center, it is ready.
