Beef Larb
This is a dish built on contrasts: the warmth of the beef against cold, crisp leaves of lettuce and the sharp tang of lime cutting through the richness of the meat. You are looking for a rapid toss where the ingredients integrate without turning the salad into a soup.
Toast the rice properly
The toasted rice powder is the backbone of the flavor profile; if you burn the rice, start over. Everything else happens quickly once the meat hits the heat.

What goes in.
- 1 lbground beef (80/20 lean-to-fat ratio)
- 2 tbspuncooked jasmine rice
- 3 tbspfish sauce
- 3 tbspfresh lime juice
- 1 tspdried chili flakes
- 1/2 cupfresh mint leaves, torn
- 1/2 cupfresh cilantro, chopped
- 1/4 cupred onion, sliced paper-thin
- 1head of butter lettuce or cabbage for serving
Khao Khua
Toast raw rice grains in a dry pan until they are the color of deep amber, then crush them into a coarse, sandy powder. This provides a smoky crunch that clings to the meat.
The method.
Toast the rice
Place the raw rice in a small, dry skillet over medium heat. Shake often for 5-7 minutes until the grains reach a deep golden brown. Remove from heat immediately, let cool, and grind in a mortar and pestle into a coarse powder.
Cook the beef
Add a tablespoon of water to the skillet over medium-high heat. Add the beef. Use a wooden spatula to break the meat into fine crumbles. Cook until just browned, about 5 minutes. Do not drain the rendered fat.
Season
Remove the pan from heat. Stir in the fish sauce, lime juice, and chili flakes while the meat is still piping hot. The liquid will bubble slightly.
Fold and serve
Let the meat sit for one minute, then stir in the red onion, mint, cilantro, and 2 tablespoons of your toasted rice powder. Transfer to a plate and serve immediately with lettuce or cabbage leaves.

Swap the beef for finely minced chicken thigh for a lighter finish.

Add finely sliced bird's eye chilies along with the chili flakes for a more aggressive bite.
