The method.

  1. Prep the cucumber

    Grate the cucumber on the large holes of a box grater. Sprinkle with a generous pinch of salt and let it sit in a colander for ten minutes.

  2. Remove the water

    Wrap the cucumber in a clean kitchen towel and wring it forcefully over the sink until it is completely dry.

  3. Combine

    In a medium bowl, whisk together the yogurt, garlic, olive oil, lemon juice, and salt until smooth.

  4. Fold and chill

    Fold the dry cucumber and fresh dill into the yogurt base. Let the mixture sit in the refrigerator for at least 15 minutes before serving to allow the garlic to mellow and the flavors to integrate.
