Making Classic Cucumber Raita
This is less of a recipe and more of a balancing act between the sharp, cooling bite of raw cucumber and the earthy depth of toasted spices. Keep it cold until the very last second before serving to maintain its crisp texture.
Control the moisture before you begin
Cucumber is mostly water; if you skip the squeezing step, your raita will turn into a thin, watery mess within minutes.

What goes in.
- 2 cupsfull-fat plain yogurt
- 1 mediumEnglish cucumber, grated
- 1 tspcumin seeds
- 1/4 cupfresh cilantro, finely chopped
- 1/2 tspkosher salt
- 1/4 tspchili powder
Extracting the liquid
After grating the cucumber, wrap it in a clean tea towel or cheesecloth and wring it tightly over the sink until no more water drips out. You want the flesh, not the juice.
The method.
Toast the cumin
Place the cumin seeds in a small dry skillet over medium heat. Shake the pan constantly until the seeds darken slightly and smell deeply aromatic, about 2 minutes. Remove immediately.
Prepare the cucumber
Grate the cucumber using the large holes of your box grater. Squeeze the shreds firmly until dry, then set aside.
Whisk the base
In a bowl, whisk the yogurt vigorously until it is smooth and no longer clumpy. It should look creamy and uniform.
Combine
Fold the dry cucumber, chopped cilantro, and salt into the yogurt. Gently stir to incorporate.
Finish
Transfer to a serving bowl. Sprinkle the toasted cumin and chili powder over the top just before bringing to the table.

Boondi Raita
Replace the cucumber with crispy fried chickpea flour droplets for added crunch.
Mint Raita
Swap the cilantro for fresh mint leaves to increase the cooling effect.

Use Greek yogurt if you want a thicker, spreadable consistency.
Crush the toasted cumin seeds slightly with the back of a spoon before sprinkling to release more oil.
If the yogurt is too thick, thin it with a tablespoon of cold water at a time.

How long will this last in the fridge?
It is best consumed within 24 hours. The cucumber will continue to release moisture, and the cilantro will wilt if stored much longer.
Do I have to peel the cucumber?
Not if it is an English cucumber with thin, tender skin. If using a standard garden cucumber, peel it first to avoid a bitter texture.
