Master the rinse
Wash the rice until the water runs clear; this removes excess starch and prevents the grains from turning into a gummy mass during cooking.

What goes in.
- 1.5 cupsaged basmati rice
- 2 tbspghee
- 2 tspwhole cumin seeds
- 1bay leaf
- 2green cardamom pods, lightly crushed

The Sizzle Point
Add the cumin seeds to hot ghee and wait until they darken a shade and jump in the pan. If they don't sizzle immediately, the fat isn't hot enough to extract the flavor.
The method.
Rinse the rice
Place the rice in a bowl and cover with cold water. Agitate gently with your hand, drain, and repeat until the water remains clear. Soak for 15 minutes, then drain completely.
Bloom the aromatics
Heat ghee in a heavy pot over medium heat. Add the cumin seeds, bay leaf, cinnamon, and cardamom. Wait for the cumin to sizzle and darken.
Toast the grains
Add the drained rice to the pot. Stir gently for 2 minutes to coat every grain in ghee until they look slightly translucent at the edges.
Simmer
Pour in the water and add salt. Bring to a boil, then immediately turn the heat to the lowest possible setting. Cover with a tight lid.
Steam
Cook undisturbed for 12 minutes. Remove from heat and let it sit for another 10 minutes with the lid on before fluffing.

Onion Jeera Rice
Sauté a thinly sliced small onion until deep brown before adding the cumin seeds.

Fold in a handful of finely chopped fresh cilantro immediately after fluffing with a fork.

Always use aged basmati; fresh basmati is often too moist and tends to break during the stir.
Do not stir the rice once the water is added, as this breaks the grains and releases more starch.
