Place the eggplant directly on the burner grate. Turn it every few minutes using tongs until the skin is charred and flaky and the center feels completely soft when pressed.

Step by step

The method.

  1. Roast

    Pierce the eggplants with a knife. Set them on the gas flame. Rotate until the skin is blistered and black all over and the vegetable is soft throughout.

  2. Cool and peel

    Place the roasted eggplants in a bowl and cover for 10 minutes. The trapped steam helps the burnt skin slide off easily. Discard the charred skin and roughly mash the pulp.

  3. Sauté

    Heat mustard oil in a pan until it reaches a smoking point. Add cumin seeds, then onions. Cook until the onions turn translucent and slightly golden.

  4. Simmer

    Stir in ginger, chilies, and tomatoes. Cook until the tomatoes break down into a thick, oily paste.

  5. Combine

    Add the mashed eggplant, turmeric, and chili powder. Fold everything together over medium heat for 8–10 minutes, allowing the moisture to evaporate.

  6. Finish

    Stir in fresh cilantro and serve while hot.
