Crispy Dry Potato Fry
This is a hands-off cook once the potatoes hit the oil. The objective is to let the starch brown into a deep amber crust without overcrowding the pan.
Size matters for the final crunch.
Cut your potato cubes into uniform half-inch pieces; if they are too large, the centers remain raw, and if they are too small, they shatter during the fry.
- Large heavy-bottomed skillet or cast iron pan

What goes in.
- 2 lbYukon Gold potatoes, peeled and cut into 1/2-inch cubes
- 3 tbspMustard oil or neutral high-smoke point oil
- 1 tspCumin seeds
- 1/2 tspTurmeric powder
- 1 tspRed chili powder
- 1 tspSalt
- 1/2 tspAmchur (dried mango powder)
Resist the urge to flip
After the potatoes are added to the hot oil, let them sit undisturbed for 4-5 minutes. Moving them too early breaks the crust formation and releases steam, which results in soggy potatoes.
The method.
Par-boil the potatoes
Bring a pot of salted water to a boil. Add the cubed potatoes and cook for 4-5 minutes until they are firm to the bite but pierced easily by a fork. Drain and let them air-dry in the colander for 5 minutes.
Temper the oil
Heat the oil in your skillet over medium-high heat. Add cumin seeds; wait until they darken and crackle.
Initial sear
Add the potatoes in a single layer. Do not crowd the pan. Sprinkle with turmeric and salt. Let them cook undisturbed until the bottom face is a deep, crusty brown.
The flip
Carefully turn the potatoes using a wide spatula. Continue cooking over medium heat, tossing occasionally, until all sides are golden and crisp.
Season and finish
Lower the heat. Add the chili powder and amchur. Toss for 30 seconds to coat the potatoes, then remove from heat immediately so the spices do not burn.

Garlic-Forward
Add one tablespoon of finely minced garlic to the oil along with the cumin seeds for a more intense pungency.
Curry Leaf Infusion
Add 8-10 fresh curry leaves to the hot oil before the potatoes to provide an earthy, citrus-like aroma.
When it doesn't go to plan.
Drying the boiled potatoes thoroughly with a towel is essential; excess surface moisture leads to oil splatter and steamed potatoes.
Do not use starchy potatoes like Russets for this; they will fall apart during the boiling process.
If using a non-stick pan, you may need slightly more oil to compensate for the lack of heat retention.

Why did my potatoes turn into mash?
The potatoes were likely boiled for too long or stirred too aggressively while frying. Keep the cubes al dente during boiling.
Can I skip the boiling step?
You can, but you must keep the heat lower and cover the pan for the first 10 minutes to ensure the centers cook through. The texture will be less crisp.
