Butter Chicken
This dish is about patience with the gravy. By letting the tomatoes and spices reduce until they darken and release their oils, you build a foundation that balances the richness of the dairy.
Marination is non-negotiable for texture.
The yogurt breaks down the chicken fibers while the spices penetrate deeply, keeping the meat tender once it hits the sauce.
- Heavy-bottomed pot or Dutch oven

What goes in.
- 1.5 lbboneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cupfull-fat plain yogurt
- 3 tbspginger-garlic paste
- 2 tspgaram masala
- 1 tspturmeric powder
- 2 tbspghee or neutral oil
- 1 largeyellow onion, finely minced
- 1.5 cupstomato puree
- 1 tbspkashmiri chili powder
- 1/2 cupheavy cream
- 3 tbspcold unsalted butter, cubed
- 1 tbspdried fenugreek leaves (kasuri methi), crushed
Waiting for the shimmer
When cooking the tomato gravy, continue stirring until the oil begins to pool at the edges of the pan. This indicates the water content has evaporated and the spices are fully toasted.
The method.
Marinate
Combine yogurt, half the ginger-garlic paste, one teaspoon garam masala, and turmeric in a bowl. Add chicken, coat thoroughly, and chill for at least 30 minutes.
Sear
Heat half the ghee in a heavy pot over medium-high. Working in batches, brown the chicken pieces on all sides. Remove and set aside; they do not need to be cooked through.
Aromatics
Add remaining ghee and onions to the same pot. Sauté over medium heat until the onions are soft and translucent, then add the rest of the ginger-garlic paste.
Simmer
Pour in tomato puree and chili powder. Cook, stirring occasionally, until the mixture darkens and the oil separates. This takes about 10–12 minutes.
Finish
Return chicken to the pot with any accumulated juices. Add half a cup of water if the sauce is too thick. Simmer for 10 minutes until the chicken is cooked through. Fold in heavy cream and cold butter until emulsified. Stir in crushed fenugreek leaves before serving.

Spicier Version
Add a teaspoon of cayenne or finely chopped serrano peppers during the onion sauté stage.
Smoky Depth
Char the chicken under a broiler for 5 minutes before adding it to the sauce to mimic a tandoor oven.
When it doesn't go to plan.
Do not skip the dried fenugreek leaves; they provide the characteristic aroma associated with restaurant-style butter chicken.
Use cold butter at the very end to give the sauce a glossy, smooth finish.
If the sauce tastes too acidic, add a half-teaspoon of sugar to balance the tomato.

Can I use chicken breast instead?
You can, but thighs hold up better to the simmer and remain tender where breasts tend to turn stringy.
What if my sauce is grainy?
If your tomato puree was chunky, blend the sauce until smooth before adding the cream and butter.
