Vegetable Biryani
This is a dish of patience and timing. You are essentially building a vertical landscape of flavor where the bottom layer creates a deep, concentrated masala and the top remains fluffy and light.
The importance of the rice starch
Wash your basmati rice in cold water at least three times until the water runs completely clear; this prevents the grains from becoming a starchy paste during the steam.
- Heavy-bottomed pot or Dutch oven
- Large mixing bowl

What goes in.
- 2 cupsaged basmati rice
- 2 tbspghee
- 1 cupcauliflower florets, cut small
- 1 cupcarrots, diced
- 1 cupgreen beans, chopped
- 1 cupgreen peas
- 2large onions, sliced into thin half-moons
- 1 cupplain yogurt
- 2 tspginger-garlic paste
- 1 tspturmeric powder
- 2 tspbiryani masala powder
- 0.5 cupfresh cilantro and mint, chopped
- pinchsaffron threads soaked in 3 tbsp warm milk
Creating the final seal
Place a clean, slightly damp kitchen towel over the pot before securing the lid tightly. This traps the rising steam, ensuring the rice finishes cooking through gentle infusion rather than direct heat.
The method.
Par-boil the rice
Bring a large pot of heavily salted water to a boil. Add the rice and cook for exactly 5 minutes until the grain is long but still has a hard, chalky center. Drain immediately.
Fry the aromatics
In a heavy pot, heat the ghee and fry half the onions until they turn dark brown and crispy. Remove them and set aside for the final garnish.
Prepare the masala
In the same pot, sauté the remaining onions, ginger-garlic paste, vegetables, spices, and yogurt. Cook until the vegetables are just barely tender; they will finish in the steam.
Layer the pot
Smooth the vegetable mixture into an even layer. Spread the par-boiled rice over the top. Drizzle the saffron milk over the rice and scatter the cilantro, mint, and fried onions on top.
Steam
Apply the 'Steam-Lock' towel and lid. Reduce heat to the lowest possible setting and let it cook undisturbed for 20 minutes.

Potato Heavy
Add 2 medium potatoes, cubed small and fried until golden before adding to the masala base.
Paneer Addition
Add 1 cup of cubed paneer in the final 5 minutes of the vegetable masala cook time to maintain texture.
When it doesn't go to plan.
Always use a heavy-bottomed pot to prevent the bottom vegetable layer from scorching before the steam fully cooks the rice.
If your stove runs hot, place a flat metal griddle or tawa between the burner and the pot to diffuse the heat.
Let the biryani rest for 10 minutes off the heat before opening the lid to allow the moisture to redistribute.

Can I use brown rice?
Brown rice requires significantly more time to soften and will not yield the same texture as basmati. It is not recommended for this method.
Why did my rice turn out mushy?
The rice was likely boiled too long in the first stage. Aim for the 'chalky center'—it should be firm to the bite before it ever hits the vegetable layer.
