Steaming Rice in a Bamboo Basket
There is a tactile quality to rice cooked in bamboo that a metal pot cannot replicate. The wood absorbs excess moisture, ensuring each grain stands apart rather than collapsing into a soft mass.
Mastering the soak and the seal
The secret is in the prep; if you skip the soak, the core of the grain will remain hard while the outside turns to paste.

What goes in.
- 2 cupslong-grain or Thai jasmine rice
- as neededwater
Maintaining the vapor seal
Ensure your steamer basket sits snugly above the water line. If steam escapes around the edges of the basket rather than through the bottom slats, your rice will steam unevenly.
The method.
Soak the rice
Rinse the rice in a bowl until the water runs clear. Cover with cold water by at least two inches and let it sit for at least 4 hours, or overnight.
Prepare the basket
Line the base of your bamboo basket with cheesecloth or a piece of parchment paper punctured with small holes to prevent the grains from falling through.
Drain
Drain the soaking water thoroughly. Spread the damp, softened rice evenly across the bottom of the lined basket.
Steam
Bring an inch of water to a boil in your wok. Place the steamer basket on top. Cover with the bamboo lid and steam for 20 to 25 minutes.
The visual check
Lift the lid; the rice is finished when the grains are translucent, firm to the bite, and easy to fluff with a wooden paddle.

Do not overfill the basket; the steam needs room to circulate between the grains to cook them evenly.
If using a wok, keep an eye on the water level so it does not evaporate completely before the rice is done.
Place the basket on a cool plate immediately after removing it from the wok to stop the cooking process.

Can I use short-grain rice?
Steaming is intended for long-grain varieties like jasmine or basmati. Short-grain rice lacks the structure for this method and will likely become gummy.
What if the rice is still hard after 25 minutes?
Sprinkle a few tablespoons of warm water over the rice, stir it gently, and steam for another 5 minutes.
