The key technique

The slow simmer

Do not rush the boil. Keeping the liquid at a gentle simmer ensures the rice grains swell and burst, which is what creates the silkiness of the base.

Step by step

The method.

  1. Rinse the rice

    Place the rice in a sieve and rinse under cold water, moving the grains with your fingers until the water is completely clear.

  2. Combine ingredients

    Add the rice, stock, ginger, and salt to the pot. Bring to a boil over medium-high heat, then immediately drop to the lowest possible setting.

  3. Simmer uncovered

    Partially cover the pot. Cook for 2 to 2.5 hours, stirring every 20 minutes to prevent the rice from sticking to the bottom. It is done when the grains have lost their shape and the liquid is thickened.

  4. Adjust consistency

    If the congee becomes too thick, stir in a splash of boiling water until it reaches the desired flow. Remove the ginger piece before serving.

Can I use brown rice?

Brown rice will not break down into the same creamy texture as white jasmine rice due to the hull; stick to short or medium-grain white rice for the traditional texture.
