Boiled Artichokes with Lemon Butter
Boil whole artichokes in salted, acidic water until the base yields easily to a knife, then serve them alongside warm, clarified butter brightened with fresh lemon juice. The goal is to steam the heart to tenderness while keeping the leaves attached so they can be pulled away and scraped against the teeth.

Artichokes oxidize quickly once cut; keep them in acidulated water until they hit the pot. You will know they are ready when the base is soft enough to slide a paring knife through without resistance.

What goes in.
- 4globe artichokes
- 1lemon, halved
- 1 tbspsea salt
- 1/2 cupunsalted butter
- 2 tbspfresh lemon juice
- 1bay leaf
Eliminate the thorns
Use kitchen shears to snip the prickly tips off every leaf and a serrated knife to remove the top inch of the globe. This prevents sharp edges and exposes the leaves to the steaming liquid.
The method.
Prepare the artichokes
Trim the top inch off each artichoke. Use shears to clip the spiky tips off the remaining outer leaves. Peel the fibrous outer layer of the stem with a vegetable peeler.
Acidify the water
Fill a large pot with enough water to submerge the artichokes. Squeeze in the juice of half a lemon, drop in the spent halves, add salt and the bay leaf, then bring to a boil.
Boil
Add the artichokes to the pot. Place a heavy heat-proof plate on top of them to keep them fully submerged. Simmer for 30 to 40 minutes.
Test for doneness
Pierce the stem base with a knife. If it slides in with no tension, they are ready. Lift them out with tongs and let them drain upside down on a clean towel.
Make the butter
Melt the butter in a small saucepan over low heat until it begins to foam. Remove from heat and stir in the fresh lemon juice.

Garlic infusion
Add two smashed garlic cloves to the butter while it melts, then strain them out before serving.
Herb butter
Stir minced fresh parsley or tarragon into the finished lemon butter for an aromatic lift.

Serve immediately while warm, as the heart flavor dulls once it reaches room temperature.

How do I know if an artichoke is fresh?
The leaves should be tight, squeaky when rubbed against each other, and heavy for their size.
Can I remove the choke before boiling?
It is easier to remove the hairy choke after cooking by cutting the artichoke in half, but if you prefer, you can scoop it out with a melon baller before boiling.
