Boiling vs. Simmering: Controlling Your Heat
Boiling happens at 212°F (100°C), characterized by large, violent bubbles that break the surface and agitate food. Simmering occurs just below that point, between 185°F and 205°F, where small bubbles gently rise and break the surface. Use a boil to cook dense items rapidly or to reduce a thin liquid; use a simmer to cook delicate items, develop complex flavors over time, or gently tenderize proteins without breaking them apart.
Watch the movement, not the clock.
Your eyes are your best gauge for heat management. Learning to recognize the bubble pattern tells you more about how your food is cooking than any thermostat.

The Bubble Test
If the water is rolling and noisy, it is boiling and stripping the texture from your ingredients. If the water is shivering with tiny, infrequent bubbles, it is simmering and building depth.
The method.
Achieving a rolling boil
Turn the heat to high until large bubbles constantly break the surface. Use this for quick-cooking items like dried pasta or to flash-cook vegetables before chilling them.
Dropping to a simmer
Once the boil is reached, adjust the burner to its lowest setting. If the pot was covered, uncover it briefly to release heat, then wait for the large, violent bubbles to vanish, leaving only tiny, slow-rising bubbles.
Monitoring the simmer
Keep the pot partially covered to prevent excessive evaporation. A proper simmer should look like the liquid is breathing, not churning.
When it doesn't go to plan.
Adding cold ingredients to a simmering pot will drop the temperature; increase the heat slightly until the simmer returns, then dial it back.
Use a heavy-bottomed pot to distribute heat evenly; thin pans create hot spots that make simmering difficult without burning.
If you lose control and the pot starts boiling, lift it off the burner entirely for ten seconds to reset the temperature.

How do I know if my simmer is too low?
If there is no movement at all on the surface, you are poaching, not simmering. You want to see at least a few small bubbles breaking the surface every few seconds.
Does a lid affect the boil?
A lid traps heat and steam, allowing water to boil faster. Once the boil begins, use the lid to control evaporation, but keep it partially ajar if you need to keep a precise simmer.
