How to Keep Cookies Fresh
Store crisp cookies in a container with a loose lid to allow air circulation, and soft, chewy cookies in an airtight container with a slice of bread to maintain moisture. Keep all cookies away from direct sunlight or heat sources to prevent fats from turning rancid.
Cooling is the non-negotiable first step.
Packing warm cookies into a container traps steam, turning them into a soggy mess within an hour. Ensure they are completely room temperature before sealing them away.

Controlling Ambient Humidity
Soft cookies naturally draw moisture from the environment; adding a fresh slice of white bread to the container forces the cookies to absorb that moisture instead of drying out. The bread will harden as the cookies remain soft.

Cool completely
Place cookies on a wire rack until they are cool to the touch. If they are even slightly warm, condensation will pool at the bottom of your container.
Sort by texture
Never mix crisp and soft cookies in the same container. The crisp ones will pull moisture from the soft ones, leaving you with a batch of uniform, stale-textured cookies.
Layer with protection
Place a sheet of parchment paper between every layer of cookies to prevent them from sticking together or breaking under their own weight.
Seal appropriately
For crisp cookies, use a container with a lid that doesn't seal perfectly, or leave it cracked slightly. For soft or chewy cookies, use a rubber-gasket airtight container to lock in moisture.

Store cookies in a cool, dark pantry; the back of a cupboard is better than a spot near the oven or a sunny window.
If you have an abundance of cookies, freeze them in a single layer on a baking sheet before moving them to a heavy-duty freezer bag to prevent them from crushing.
Bring frozen cookies to room temperature while still in their bag to prevent condensation from forming on the surface as they thaw.

Can I store cookies in the refrigerator?
Avoid the fridge. The atmosphere is too dry and the constant temperature fluctuations will cause the fats in the cookies to go stale much faster than at room temperature.
How long will they stay fresh?
Most cookies will maintain their intended texture for 3 to 5 days if stored correctly. Beyond that, the oils begin to oxidize and the flavor profile changes.
