How to Freeze Baked Goods
To freeze baked goods successfully, let them cool completely on a wire rack before wrapping them tightly in plastic film, followed by an airtight layer of foil or a heavy-duty freezer bag. Moisture is your enemy; ensure the item is cold to the touch so no condensation forms inside the packaging, which leads to ice crystals and freezer burn.

Never attempt to freeze anything still warm. Any residual heat will turn into steam once sealed, ruining the crumb of cakes or the crust of breads.

Block the air, keep the moisture
First, wrap the item directly in plastic to hug the shape. Then, add a second layer of foil or slide the wrapped item into a freezer bag to prevent air exposure.

Place cakes, cookies, or bread on a wire rack for at least an hour. If you put a warm muffin into a bag, the bottom will go soggy.
Wrap tightly
Wrap the item in a layer of plastic film. Press the film against the surface of the food to minimize air gaps.

Wrap the plastic-covered item in a layer of foil or place it inside a thick freezer-safe bag. Squeeze as much air out of the bag as possible before sealing.
Thaw correctly
