How to Store Bread at Home
Keep crusty bread in a paper bag on the counter for up to two days, or store sandwich loaves in a tightly sealed plastic bag at room temperature. If you need to keep bread longer than three days, slice it immediately and freeze it in airtight bags to lock in the texture.

The goal is to maintain the internal moisture of the crumb without letting the crust soften or mold take hold. Avoid the refrigerator at all costs, as the cold temperature accelerates the staling process by causing starch molecules to recrystallize rapidly.

Freeze to Preserve
Slice your loaf before freezing so you can pull out single portions as needed. Wrap slices tightly in plastic wrap before putting them in a freezer bag to prevent ice crystals from forming on the crumb.

Assess the crust
If the bread has a hard, thick crust, use a paper bag. It allows the bread to breathe, keeping the crust crisp while the interior stays soft.
Seal soft breads
For sandwich loaves or brioche with a soft exterior, use a plastic bag or a bread box. These loaves rely on their own moisture to stay soft and will dry out if exposed to air.
Positioning
Store your bread in a cool, dark cupboard or bread box away from the stove or windows. Heat and sunlight will encourage mold growth.

If a crusty loaf has hardened, lightly mist the crust with water and place it in a 350°F oven for five minutes. This draws moisture back into the crumb and re-crisps the exterior.
