How to Store Milk Properly

Keep milk in its original container at the back of the refrigerator where the temperature remains lowest and most stable. Storing milk in the refrigerator door invites spoilage because the constant opening and closing of the appliance exposes the liquid to fluctuating temperatures.

Before you start

Cold is the only constant.

Milk begins to lose quality the moment it is exposed to light or air, and heat accelerates bacterial growth. The goal is to keep it at or below 40°F (4°C) at all times.

The key technique

The Back Shelf Advantage

Always tuck the milk jug against the back wall of the bottom or middle shelf, furthest from the light and the door.

Step by step

The method.

  1. Check the seal

Ensure the cap is screwed on tight or the carton seal is fully closed before placing it in the fridge.

  2. Select the location

Clear space on a main shelf. Never store milk in the door pockets, as this is the warmest part of the refrigerator.

  3. Limit exposure

Pour only what you need and return the container to the refrigerator immediately. Do not leave the jug on the counter while you eat.

Tips & troubleshooting

When it doesn't go to plan.

Tip

Keep the refrigerator set to 37°F to 39°F for maximum longevity.

Tip

If you buy large quantities, divide them into smaller, sealed glass bottles so that you aren't opening a massive gallon container every morning.

Tip

If milk has been left out on a counter for more than two hours, it is best discarded.

Questions

The ones that keep coming up.

Does light affect milk?

Yes, exposure to both sunlight and interior refrigerator light can degrade the flavor and nutritional components over time. Keeping the container opaque or tucked away helps.

Can I freeze milk?

Yes, but the texture will change. Upon thawing, the milk may appear separated or grainy. Give it a vigorous shake or use it exclusively for cooking rather than drinking.
