Thai Fish Sauce Fundamentals
You are balancing four pillars in Thai cuisine: salt, sour, sweet, and heat. Fish sauce provides the salt, but it brings a fermented earthiness that salt crystals simply cannot replicate. Treat it like a spice rather than a liquid seasoning.

Check the back of the bottle for the nitrogen or protein content. Anything above 15 degrees is a sign of a clean, premium ferment that won't taste like brine.

Balancing the Funk
Always pair fish sauce with an acid like lime juice or tamarind. The acid cuts the fermented intensity, lifting the sauce into a bright, forward seasoning that coats the palate.

Identify the base
Smell the bottle. A good fish sauce should smell like the sea and cured earth, never like rot or chemical pungency.
Seasoning by volume
Start with a teaspoon at a time. It is significantly more potent than table salt; over-salting happens in seconds.
Applying heat
If you must cook with it, add it in the final two minutes of a stir-fry to avoid burning the sugars in the fermentation process.
The finishing touch
For soups or curries, turn the heat off, stir in your fish sauce, and taste. The temperature drop ensures the aroma remains sharp and distinct.

Combine 3 tablespoons of fish sauce with 1 tablespoon of lime juice and thinly sliced bird's eye chilies. Serve alongside any stir-fry.

Combine equal parts fish sauce and palm sugar in a saucepan over low heat until thickened into a glaze for grilled proteins.

Store your bottle in a cool, dark cupboard; keep it away from the stove to prevent the sauce from darkening.
If the sauce develops crystals at the bottom, that is salt separation—it is still perfectly fine to use.
Never use fish sauce as a marinade for long durations if you are cooking over high heat; the sugars will cause it to blacken and taste bitter.

In Thai-inspired dishes, yes. In Western recipes, use it sparingly as a hidden depth-builder, starting with half the amount of salt the recipe calls for.
Why is my fish sauce turning dark brown?
Oxidation. Once the bottle is opened, it is exposed to air. Buy smaller bottles to keep the freshness profile intact.
