The method.

  1. Heat the skillet

    Place your skillet over medium-low heat. Do not add oil or butter; the pan must remain dry.

  2. Add the spices

    Spread the spices in a single layer. If you overcrowd the pan, they will steam rather than toast.

  3. Agitate continuously

    Move the spices constantly with your spoon. Shake the pan occasionally to ensure the spices tumble over themselves.

  4. Monitor the color and scent

    Watch for the spices to darken by one or two shades. When the aroma fills your kitchen and the spices start to 'pop' or jump, they are done.

  5. Cool and grind

    Immediately tip the spices onto a cold plate to stop the cooking. Grind them once they are cool to the touch.
