Sofrito Fundamentals
This is not a garnish; it is the heartbeat of the pot. By giving the vegetables time to break down in the oil, you strip away their raw edges and turn them into a cohesive, fragrant concentrate.
Consistency is your primary goal.
The smaller you chop your vegetables, the better they will melt into the oil. Aim for a consistent, fine dice so every ingredient cooks at the same speed.

What goes in.
- 2 largecubanelle peppers, seeded and chopped
- 1 mediumyellow onion, roughly chopped
- 1 headgarlic, peeled
- 1 bunchcilantro, stems removed
- 4aji dulce peppers, seeded
- 1/2 cupextra virgin olive oil
Patience over Heat
Do not rush the onions. If they brown quickly, the sugars are burning; keep the heat low and stir until the onions turn translucent and soft, allowing the moisture to evaporate.
The method.
Pulse the aromatics
Place the peppers, onion, garlic, and cilantro into a food processor. Pulse until the mixture is finely chopped but not yet a puree.
Heat the oil
Add the olive oil to a heavy-bottomed pan over medium-low heat. Once it shimmers, add your vegetable mixture.
Sweat the mixture
Stir continuously. You are looking for the point where the bright green raw color shifts to a muted, deep olive tone and the harsh smell of raw garlic disappears.
Cool and store
Remove from heat once the moisture has largely evaporated. Let it reach room temperature before transferring to a glass jar for the refrigerator.

The Tomato Base
Add two tablespoons of tomato paste during the final five minutes of cooking for a deeper, earthier profile.
Spiced Sofrito
Stir in a teaspoon of ground annatto or cumin once the vegetables are soft to add color and warmth.
When it doesn't go to plan.
Freeze leftovers in ice cube trays so you can drop a single portion directly into a hot pan later.
If you lack a food processor, use a sharp knife and take your time; the texture of hand-chopped sofrito often holds up better in long-simmering stews.
Always start your dish by frying the sofrito in the empty pan for two minutes before adding rice or liquid.

How long will this stay fresh?
It will keep in an airtight glass container in the refrigerator for up to one week.
Can I substitute the aji dulce?
Aji dulce provides a specific fruitiness without the heat. If you cannot find them, use an extra cubanelle, though the flavor profile will be less complex.
