Saffron Chicken Skewers
The secret to these skewers is the patience taken to steep the saffron until the water turns deep crimson. If you rush the infusion, the flavor remains locked in the threads rather than penetrating the chicken.
Commit to the marinade time.
Chicken thighs are forgiving, but they need at least four hours to absorb the floral notes of the saffron. If you use bamboo skewers, soak them in water for thirty minutes to prevent them from catching fire.

What goes in.
- 1.5 lbboneless, skinless chicken thighs, cut into 1.5-inch pieces
- 1/2 tsphigh-quality saffron threads
- 2 tbspboiling water
- 1/2 cupfull-fat Greek yogurt
- 2 tbspfresh lemon juice
- 1small yellow onion, finely grated
- 2 clovesgarlic, smashed and minced
- 1 tspkosher salt
Extracting the color and essence
Grind the threads to a powder in the mortar, then add the boiling water. Let this sit for ten minutes until the water is a deep, translucent amber before mixing it into the yogurt.
The method.
Bloom the saffron
Grind threads into a fine dust in your mortar. Pour the boiling water over them and set aside until cool.
Prepare the marinade
In a large bowl, whisk the saffron liquid, yogurt, lemon juice, grated onion, garlic, and salt until smooth.
Marinate the chicken
Add the chicken pieces to the bowl. Toss until coated. Cover and refrigerate for 4 to 6 hours.
Skewer the meat
Thread the chicken onto skewers. Leave a tiny gap between pieces to ensure even airflow and browning.
Grill
Cook over medium-high heat. Flip only once the meat releases easily from the grates and shows dark, charred edges, about 5–6 minutes per side.

Add a tablespoon of fresh lemon zest to the marinade for a sharper, more aromatic finish.
Spiced
Fold in a quarter-teaspoon of ground cardamom to complement the floral notes of the saffron.

Grate the onion rather than chopping it; the juices are what tenderize the meat effectively.
Do not overcrowd the grill; if the heat drops, the chicken will steam instead of char.
Check for doneness by pressing the center of the meat; it should feel firm and spring back slightly.

Can I use chicken breasts instead?
You can, but thighs retain moisture significantly better under the direct heat of a grill.
How do I know the saffron is high quality?
The threads should be entirely deep red. If there are yellow parts on the threads, it is of lower quality and will provide less color.
