Garlic Yogurt Dip

This dip relies on draining excess whey from full-fat yogurt to achieve a thick, stable texture that clings to bread. By grating the garlic directly into a small amount of salt before adding it to the yogurt, you break down the harsh bite and create a smooth, pungent paste that integrates evenly.

Before you start

Texture is everything.

Use thick, full-fat Greek-style yogurt. If your yogurt is loose, drain it through a cheesecloth or fine mesh sieve for twenty minutes before mixing.

  • fine mesh sieve
  • mixing bowl
  • microplane or fine grater
  • silicone spatula
Ingredients

What goes in.

  • 2 cupsfull-fat Greek yogurt
  • 3 clovesgarlic, peeled
  • 1/2 tspkosher salt
  • 1 tbspextra virgin olive oil
  • 1 tspfresh lemon juice
  • 1 tbspfresh mint or dill, chopped
The key technique

Grating and Mashing

Do not chop your garlic with a knife. Grate it into a fine pulp and mash it against the salt; this creates a garlic cream that disappears into the yogurt without leaving chunks.

Step by step

The method.

  1. Prep the garlic

Grate the garlic cloves into a small bowl using a microplane. Sprinkle the salt over the top and use the back of a spoon to grind the salt and garlic together until a thick, uniform paste forms.

  2. Combine

Add the garlic paste, lemon juice, and olive oil to the yogurt. Stir gently with a spatula until fully incorporated.

  3. Chill and rest

Cover and refrigerate for at least twenty minutes. This pause allows the raw intensity of the garlic to mellow and distribute throughout the yogurt fats.

  4. Garnish and serve

Fold in the fresh herbs just before serving. Drizzle with a final touch of olive oil.

Variations

Other turns to take.

Cucumber Garlic Dip

Fold in one finely diced, seeded cucumber that has been squeezed dry in a towel to add crunch.

Spicy Garlic Dip

Stir in a half-teaspoon of Aleppo pepper or smoked paprika for color and a subtle heat.

Tips & troubleshooting

When it doesn't go to plan.

Tip

If you find the garlic too sharp, let the paste sit for five minutes before mixing it into the yogurt.

Tip

Keep the olive oil high-quality, as its flavor will be front and center in the final drizzle.

Tip

Serve alongside warm pita, toasted flatbread, or crisp raw vegetables.

Questions

The ones that keep coming up.

Can I use low-fat yogurt?

It is not recommended. The fat content provides the necessary body and prevents the dip from becoming watery after the salt and lemon juice are added.

How long will this stay fresh?

The dip is best consumed within two days. The garlic flavor will intensify the longer it sits in the refrigerator.
