Traditional Vanilla Atole
This is a drink defined by the texture of masa and the hum of real vanilla. It is a humble, grounding start to the morning that relies on patient stirring and gentle heat.
Patience is your primary ingredient
Have everything measured and ready before you turn on the burner. The masa thickens quickly once the milk reaches a simmer, and you cannot walk away from the pot.
- Heavy-bottomed saucepan

What goes in.
- 4 cupswhole milk
- 1/2 cupmasa harina
- 3 ozpiloncillo, chopped into small pieces
- 1cinnamon stick
- 1 tbsppure vanilla extract
- 1 pinchsea salt
Hydrating the Masa
Whisk the masa harina into one cup of cold milk until completely smooth before adding it to the pot. If you add dry masa directly to hot liquid, it will clump into unfixable lumps.
The method.
Dissolve the base
In a small bowl, whisk the masa harina with 1 cup of the milk until the mixture is the texture of heavy cream.
Infuse the liquid
Pour the remaining 3 cups of milk into the saucepan over medium heat. Add the piloncillo, cinnamon stick, and salt. Stir occasionally until the piloncillo dissolves and the milk begins to steam.
Combine
Slowly pour the masa slurry into the hot milk, whisking constantly. Lower the heat to medium-low.
Simmer and thicken
Cook for 10 to 12 minutes, stirring steadily with your wooden spoon. The mixture will coat the back of the spoon when it is ready.
Finish
Remove from heat. Stir in the vanilla extract, remove the cinnamon stick, and pour into mugs while steaming.

Almond Atole
Replace one cup of milk with almond milk and add a teaspoon of toasted almond extract at the end.
Spiced Atole
Add a pinch of ground cloves or a star anise pod during the infusion stage for a sharper profile.

If you accidentally create lumps, pass the finished liquid through a fine-mesh sieve into a clean pot.
Adjust the sweetness by adding more piloncillo while the milk is still hot; it will not dissolve once the mixture thickens.
The atole will thicken significantly as it sits; if it becomes too dense, thin it with a splash of warm milk before serving.

Can I use cornstarch instead of masa harina?
No. Masa harina is treated with lime, which gives atole its characteristic flavor and texture. Cornstarch will result in a flavorless, pudding-like consistency.
How do I know if the piloncillo is fully dissolved?
Drag your spoon across the bottom of the pot; if you feel any grit or hard granules, keep stirring.
