Mashing the base

Use a mortar and pestle to grind the onion, chiles, and salt into a coarse paste before adding the avocado. This extracts the aromatics' juices so they distribute evenly rather than sitting in clumps.

The method.

  1. Prepare the aromatics

    Combine the onion, chiles, and salt in your bowl or mortar. Mash or stir vigorously until the onion releases some liquid.

  2. Incorporate the avocado

    Cut the avocados in half, remove the pits, and scoop the flesh into the bowl. Use a fork or pestle to fold the avocado into the aromatics.

  3. Adjust the texture

    Continue folding until the mixture is mostly creamy but still retains small, distinct pieces of avocado. Do not over-mash into a paste.

  4. Finish and serve

    Fold in the lime juice and fresh cilantro. Taste and add more salt if the flavor feels flat.
