Keep the oil at a steady shimmer. If the breadcrumbs darken immediately upon contact, the heat is too high; if they sit in the oil without bubbling, the heat is too low.

Step by step

The method.

  1. Prepare the meat

    Place cutlets between sheets of plastic wrap. Pound with the flat side of a mallet until they are a uniform quarter-inch thick.

  2. Set up the station

    Place flour in the first bowl, beaten eggs in the second, and panko in the third. Season the flour lightly with salt and pepper.

  3. Dredge and coat

    Press each cutlet into the flour, shaking off the excess. Dip into the egg, letting the excess drip off, then press firmly into the panko so the crumbs adhere.

  4. Fry

    Heat oil in the skillet over medium-high. Once hot, lay cutlets in the pan away from you. Cook for 2 to 3 minutes per side until the crust is a uniform mahogany brown.

  5. Rest

    Transfer cutlets to a wire rack. Let them sit for 2 minutes before serving to ensure the crust stays crisp.
