Stretching Pizza Dough by Hand
The goal is to maintain the internal air pockets you built during fermentation. Rolling pins collapse those bubbles, resulting in a dense, cracker-like base rather than an airy, light crust.
Temperature is your best tool
Cold dough is tight and will snap back like a rubber band; properly relaxed dough is soft and pliable.
- Clean, smooth countertop
- Semolina flour
- Bench scraper
What goes in.
- 4dough balls (250g each)
- 1/2 cupsemolina flour for dusting
Using gravity as your guide
Drape the disc over your knuckles and rotate it continuously. The weight of the dough does the stretching for you, ensuring an even thickness without tearing.
The method.
Prep the surface
Dust your counter liberally with semolina flour. Do not use too much all-purpose flour, as it can burn on the pizza stone later.
Create the rim
Place the dough ball in the flour. Press your fingers into the center, moving outward but stopping an inch from the edge. This creates the crust boundary.
Flatten the center
Use the heels of your hands to gently push the center flat. You want a uniform disc that is thicker at the edge and thin in the middle.
The knuckle stretch
Lift the dough by the edges and carefully move it onto your knuckles. Keep your hands moving in a circular motion, letting the dough hang and stretch downward.
Final sizing
Lay the dough back onto the floured counter. If it pulls back, let it rest for five minutes to allow the gluten to relax before finishing the stretch.
When it doesn't go to plan.
If the dough tears, pinch it shut, let it rest for ten minutes, and start the stretching process again.
Always stretch on a surface that has a bit of grip; too much flour makes it slide around and makes control difficult.
If the dough fights you, cover it with a towel and walk away for fifteen minutes; time is the only way to solve tight gluten.

Why does my dough keep shrinking back?
The gluten is too active. Let the dough rest at room temperature for another 20 minutes before trying again.
Should I use a rolling pin?
Avoid it. A pin forces all the gases out of the dough, which prevents the crust from rising into a light, airy structure in the oven.
