Forcing the Air

The goal is to create small, uniform bubbles. Use short, vigorous pumps if using a French press, or keep the immersion blender head just below the surface until you see a vortex form.

Step by step

The method.

  1. Heat the milk

    Pour the milk into a saucepan over medium heat. Watch it closely with the thermometer. Pull it off the heat the moment it hits 150°F.

  2. Aerate

    If using a French press, pour the hot milk into the carafe. Move the plunger up and down rapidly just below the surface for 20 seconds. If using an immersion blender, hold it at a slight angle near the top of the liquid until the milk thickens.

  3. Groom the foam

    Tap the container firmly on the counter to pop any large surface bubbles. Swirl the pitcher in a tight circle to polish the foam until it looks like wet paint.
