Crispy Masala Dosa
Achieving the right texture requires patience during the fermentation process. Once the batter develops a slight tang, the actual cooking moves quickly.
Temperature control is your primary tool
If the griddle is too cold, the dosa will stick or turn rubbery; if too hot, the batter will set before you can spread it. Keep a small bowl of water and a cloth handy to wipe and cool the surface between batches.
- Heavy-duty cast iron griddle
- High-speed blender
- Flat-bottomed steel ladle

What goes in.
- 3 cupsparboiled rice
- 1 cupurad dal (split black gram)
- 1 tspfenugreek seeds
- 4 largeyellow potatoes, boiled and cubed
- 2green chilies, slit
- 1 tspmustard seeds
- 1/2 tspturmeric powder
- 1 sprigcurry leaves
- to tastesalt
- as neededghee or neutral oil
Radial motion
Start your ladle in the center of the griddle and move in a tight, continuous outward spiral. Do not lift the ladle until you reach the outer edge to ensure the crepe remains thin and uniform.
The method.
Soak
Soak rice, dal, and fenugreek seeds in separate bowls with water for 6 hours.
Grind
Drain the water and grind the mixture to a smooth, thick paste. Add minimal water only if needed to keep the blades moving.
Ferment
Cover the batter and let it sit in a warm spot overnight until it bubbles and increases in volume.
Prepare filling
Heat oil, temper with mustard seeds and curry leaves. Add turmeric, chilies, and potatoes; mash slightly and cook for 5 minutes.
Cook dosa
Heat the griddle to medium-high. Wipe with an oiled cloth. Pour a ladle of batter, spread in a spiral, drizzle a few drops of ghee around the edges, and cook until the underside is deep gold and crisp.
Fill and serve
Place a portion of potato filling in the center and fold the dosa over. Serve hot.

Spread a spicy red chutney made of garlic and dried chilies over the crepe before adding the potato filling.
Paneer Dosa
Grate fresh paneer over the potato filling just before folding.
When it doesn't go to plan.
If your batter does not ferment, it is likely the room temperature is too low; move it to the inside of an oven with just the light turned on.
Always whisk the fermented batter gently before pouring to ensure the consistency is airy.
Use a cast iron surface rather than non-stick for a superior, uneven crunch that traps ghee.

Why is my dosa sticking to the pan?
The pan is either not hot enough, or it has not been seasoned properly. Ensure the surface is wiped clean of residue between every single dosa.
Can I use store-bought rice flour?
No. The texture depends on the starch released during the wet grinding process of soaked whole grains.
