  • 1/4 cupextra virgin olive oil, plus extra for serving

The key technique

Creating the base

Do not thicken this soup with flour. By boiling the potatoes until they are soft and then breaking them down into the stock, you achieve a natural, velvety body.

Step by step

The method.

  1. Sauté the aromatics

    Heat the olive oil in your pot over medium heat. Add the onion and cook until soft and translucent, then add the garlic and cook until fragrant, about 2 minutes.

  2. Simmer the base

    Add the potato chunks and stock. Bring to a boil, then lower the heat and simmer for 20 minutes until the potatoes are completely tender when pierced with a fork.

  3. Build the texture

    Remove the pot from the heat. Use an immersion blender to partially puree the potatoes directly in the liquid, leaving some small chunks for texture. If you don't have an immersion blender, use a potato masher.

  4. Cook the sausage

    Return the pot to medium heat. Add the sliced chouriço and let it simmer for 5-8 minutes so the fat renders into the soup base.

  5. Wilt the greens

    Add the ribboned kale to the pot. Stir well and cook for 3-4 minutes until the greens are bright green and soft. Remove from heat immediately.

  6. Finish

    Season with salt and pepper. Ladle into bowls and drizzle a small amount of fresh olive oil over the top of each serving.

Omit the chouriço and add a pinch of smoked paprika to the sautéed onions to maintain the depth of flavor.
