Sichuan Pepper Tincture
This is a tool for the kitchen shelf that keeps the numbing power of Sichuan peppercorns ready for immediate use. Use it when you need to adjust the intensity of a cold noodle sauce or bring a sharp, vibrating edge to a stirred drink.
Use the right proof.
You need high-proof, neutral alcohol to effectively pull the oils from the pepper husks. If the proof is too low, the tincture will be thin and lack intensity.
- small dry skillet

- small glass jar with airtight seal
- fine mesh strainer
- cheesecloth
What goes in.
- 1/2 cuphigh-quality red Sichuan peppercorns
- 1 cupneutral spirit, 100 proof or higher (vodka or grain alcohol)
Toast, Crush, Steep
The secret is to briefly heat the peppercorns to release the volatile aromatics before crushing them, then submerging them completely to ensure full extraction over the two-week wait.
The method.
Toast the peppercorns
Place the peppercorns in a dry skillet over medium heat. Shake the pan constantly for 2–3 minutes until they become fragrant and darken slightly. Remove from heat immediately to avoid burning.
Coarsely grind
Once cooled, lightly crush the husks in a mortar and pestle. You want broken pieces, not a fine powder, so the alcohol can easily circulate through the husks.
Combine
Transfer the crushed peppercorns to a clean glass jar. Pour the alcohol over them until they are fully covered.
Steep
Seal the jar and store it in a cool, dark cupboard. Shake the jar daily for two weeks to keep the infusion active.
Strain
After two weeks, line a fine mesh strainer with cheesecloth and pour the tincture through it into a clean dropper bottle. Press the husks to extract every drop of liquid.
When it doesn't go to plan.
Discard the husks after straining; they will have lost all their numbing power.
Store in a dark-colored glass dropper bottle to protect the tincture from light exposure.
Start with just two or three drops when adding to a dish; the numbing sensation builds quickly.

How long does this last?
Kept in a sealed glass bottle away from direct sunlight, the tincture remains potent for at least a year.
Can I use lower-proof vodka?
It will work, but the extraction will be less efficient and the resulting tincture will taste more 'watery' and less concentrated.
