Quick-Pickled Cucumber Salad
This salad relies on a brief salt-and-sugar draw to pull excess moisture from the cucumbers, keeping the dressing bright and crisp rather than watery. You slice them thin, macerate them with salt for fifteen minutes, and toss them in a vinegar-based brine just before serving.
Control the crunch through timing
The salt draw is the most important step; skip it, and the cucumbers will release their water into the bowl as soon as the dressing hits.

What goes in.
- 2 lbEnglish cucumbers, sliced into thin rounds
- 1 tbspkosher salt
- 1/2 cuprice vinegar
- 2 tbspgranulated sugar

Drawing out the water
By salting the cucumbers and letting them sit in a colander, you toughen the cell walls slightly and remove the liquid that would otherwise dilute your dressing.
The method.
Prep the cucumbers
Slice the cucumbers into rounds about 1/8-inch thick. If they are wider than a silver dollar, cut the rounds into half-moons.
Salt and drain
Place the slices in a colander set inside a bowl. Toss with the salt and let them sit for 15 minutes. You will see a pool of cloudy liquid collect at the bottom of the bowl.
Mix the dressing
Whisk the rice vinegar, sugar, and sesame oil in a clean bowl until the sugar dissolves completely.
Combine
Pat the cucumber slices dry with a kitchen towel to remove excess salt, then add them to the bowl with the dressing. Toss in the fresh dill just before bringing to the table.

Add one thinly sliced serrano pepper or a teaspoon of red chili flakes to the dressing.
Red Onion Twist
Add half a red onion, shaved paper-thin, to the colander with the cucumbers for a sharper bite.

Always use English or Persian cucumbers; the skin on standard garden cucumbers is too thick and bitter for this raw preparation.
If the salad sits for more than an hour, the cucumbers will begin to lose their snap; keep it refrigerated until the final toss.

Can I use white vinegar instead of rice vinegar?
You can, but it is much harsher. If you do, reduce the amount to 1/3 cup and add an extra teaspoon of sugar to balance the acidity.
