Crispy Soy-Glazed Tofu

The key technique

Watch the bubbles

Once the soy mixture hits the hot pan, it will hiss and froth. Keep the heat high and stir constantly until the bubbles turn from large and watery to small, thick, and syrupy.

Step by step

The method.

  1. Press the tofu

    Wrap the block in paper towels and set a heavy object on top. Leave it for 15-20 minutes to draw out excess liquid.

  2. Cube and coat

    Cut the tofu into one-inch cubes. Toss them gently in a bowl with cornstarch until each piece is lightly dusted and white.

  3. Sear

    Heat oil in the skillet over medium-high heat. Add the tofu in a single layer. Don't touch it for three minutes, then turn to crisp the other side.

  4. Glaze

    Whisk soy sauce, sugar, ginger, and garlic. Pour over the hot tofu. Toss for two minutes until the sauce reduces into a thick lacquer.
