Pork and Chive Filling
This filling relies on the ratio of fatty ground pork to fresh, pungent garlic chives. You create a cohesive, bouncy texture by stirring the seasoned meat vigorously in one direction until it becomes tacky, then folding in the greens at the very last moment to keep them bright.
Mind the fat and the moisture
Use ground pork with at least 20% fat content to prevent the filling from drying out. Drain the chives thoroughly after washing to keep your wrappers from turning into mush.

Stir in one direction

Add the coated chives to the meat paste and fold together gently just until combined.
