  • 1 tsptoasted sesame oil
  • 2 tbspcornstarch mixed with 2 tbsp water (for sealing)
  • 3 cupsneutral frying oil, such as grapeseed or canola
The key technique

Sautéing the filling

Sauté your vegetables over medium-high heat until they lose their raw crunch but before they release excess liquid. Strain the filling through a sieve to remove any residual juices.

Step by step

The method.

  1. Cook the filling

    Sauté the cabbage, carrots, and mushrooms with the soy sauce and sesame oil until just tender. Drain well and let the mixture sit in the fridge until chilled.

  2. Prepare the wrapper

    Lay one wrapper in a diamond shape. Place two tablespoons of filling in the lower third. Fold the bottom point up, tuck in the sides, and roll upward tightly.

  3. Seal

    Brush the final top edge with the cornstarch paste and press down to create an airtight seal.

  4. Fry

    Heat oil to 350°F (175°C). Fry the rolls in batches for 3-4 minutes, turning occasionally until they turn a pale golden brown.

  5. Drain

    Transfer to a wire rack. Let them rest for two minutes before serving to ensure the steam vents and the crust hardens.
