Step by step

The method.

  1. Slice and salt

    Use a mandoline to slice cucumbers into 1/8-inch coins. Toss in a colander with the salt. Place over a bowl and leave for 30 minutes until beads of water form on the surface.

  2. Prepare the brine

    While the cucumbers drain, whisk the vinegar, water, and sugar in a glass bowl until the sugar is completely dissolved. Add the onions and peppercorns.

  3. Combine

    Rinse the salt off the cucumbers under cold water, then pat them dry with a kitchen towel. Add the cucumbers to the brine, pressing them down so they are submerged.

  4. Chill

    Cover and refrigerate for at least two hours. The color of the cucumbers will shift from bright opaque green to a slightly translucent, deep jade.
