The method.

  1. Trim and tear

    Cut off the tough stem end of the lettuce. Use your hands to tear larger leaves into bite-sized pieces.

  2. Submerge and swish

    Fill a large bowl with very cold water. Drop the greens in and move them around with your hands in a gentle, circular motion for thirty seconds.

  3. Remove

    Lift the greens out of the water with your hands or a spider strainer. If the water looks murky, empty the bowl, refill with fresh water, and repeat until the water stays clear.

  4. Dry thoroughly

    Place greens in a salad spinner and spin until no water sprays out. If using towels, lay greens in a single layer on a clean cloth, roll it up gently, and press to absorb moisture.
