Roasted Asparagus
Roasted asparagus thrives on high heat and minimal interference. Snap the woody ends off by hand, toss with high-smoke-point oil, and roast at 425°F until the stalks are tender and the tips carry a charred, crisp edge.
Size dictates the timing
Select stalks of uniform thickness so they cook evenly. If you encounter pencil-thin spears, they will finish several minutes before the thick ones.

What goes in.
- 1 lbfresh asparagus, woody ends trimmed
- 1 tbspavocado or grapeseed oil
- 1/2 tspkosher salt
- 1/4 tspcracked black pepper

Hold a spear at both ends and bend; it will naturally snap where the tender stalk meets the fibrous, woody base. This ensures you never serve a chewy end.
The method.
Preheat your oven
Set the oven to 425°F (220°C). Place your empty baking sheet in the oven while it preheats; starting with a hot pan gives the asparagus a head start on searing.
Prepare the stalks
Snap the woody ends off the asparagus. Rinse the spears under cold water and dry them thoroughly with a towel; moisture causes steaming rather than roasting.
Season
Place the dry asparagus on a plate. Drizzle with oil and sprinkle with salt and pepper. Use your hands to roll the spears until they are evenly coated.
Roast
Carefully remove the hot pan from the oven. Spread the asparagus in a single layer. Roast for 8 to 12 minutes, depending on thickness, until the stalks are slightly shriveled and the tips are dark brown.

Toss with a squeeze of fresh lemon juice and a tablespoon of grated parmesan immediately after removing from the oven.

Drizzle with a teaspoon of thick balsamic reduction once the stalks are plated.
