Roasted Asparagus with Lemon
Asparagus is built for the oven, not the steamer. When you expose it to high heat, the natural sugars caramelize and the woody stalks transform into something firm and bright.
Snap the woody ends off manually
Don't rely on a knife to guess where the tough part of the stalk begins; hold each spear at both ends and bend until it snaps naturally at the tender point.

What goes in.
- 1 lbfresh asparagus, woody ends snapped off
- 2 tbspolive oil
- 1/2 tspkosher salt
- 1/4 tspcracked black pepper
- 1lemon, cut into wedges
Preheat the pan
Place your empty baking sheet in the oven while it preheats to 425°F. When the cold asparagus hits the searing-hot metal, it begins to brown instantly.
The method.
Heat the oven
Set your oven to 425°F and slide the empty baking sheet onto the middle rack while the oven reaches temperature.
Prepare the stalks
In a bowl, toss the trimmed asparagus with olive oil, salt, and pepper until each stalk is glistening.
Roast
Carefully remove the hot pan from the oven, scatter the asparagus across it in a single layer, and return it to the oven for 8 to 12 minutes.
Check the sear
The stalks are done when they are bright green, tender when pierced with a knife, and show small, dark charred spots on the tips.
Finish
Remove from the oven and immediately squeeze half the lemon over the hot spears before serving with the remaining wedges.

Cheesy Finish
Microplane a generous amount of parmesan over the spears the moment they come out of the oven.
Garlicky
Toss two thinly sliced garlic cloves with the oil and asparagus before roasting.
When it doesn't go to plan.
If your asparagus stalks are pencil-thin, reduce the roasting time by three minutes.
Do not crowd the pan; if the stalks are stacked on top of each other, they will steam instead of roast.
Keep the asparagus spears uniform in thickness so they finish cooking at the same time.

Can I use bottled lemon juice?
Fresh juice contains volatile oils in the peel that provide a necessary aromatics that bottled juice lacks. Stick to fresh.
Why did my asparagus turn out mushy?
The oven temperature was likely too low, or you left them in for too long. Ensure the oven is fully preheated before putting the pan inside.
