Step by step

The method.

  1. Toast the barley

    Heat 1 tablespoon of oil in the Dutch oven over medium heat. Add the dry barley and stir constantly for 3 minutes until it smells like toasted nuts. Remove from the pot and set aside.

  2. Build the vegetable base

    Add the remaining oil to the pot. Stir in onions, carrots, celery, and mushrooms. Cook over medium-high heat until the mushrooms release their moisture and the onions begin to brown.

  3. Bloom the aromatics

    Add the minced garlic and dried thyme. Stir for 60 seconds until fragrant, being careful not to brown the garlic.

  4. Simmer

    Return the toasted barley to the pot. Pour in the stock. Bring to a boil, then reduce heat to low, cover, and simmer for 40 minutes or until the barley is tender but still has a slight chew.

  5. Finish with greens
