Think of your indirect zone as an outdoor oven. It is the destination for any food that needs more than five minutes to reach its finished temperature, preventing the bottom from carbonizing.

Step by step

The method.

  1. Configure the heat source

    For gas, turn half the burners to high and leave the others off. For charcoal, pile all lit coals on one side of the grill, leaving the opposite grate empty.

  2. Preheat with the lid closed

    Wait until the thermometer on the lid registers high heat. This ensures the grates themselves are hot enough to mark the meat, not just the air inside.

  3. Sear over direct heat

    Place food directly over the flames to build a crust. Do not move it until the meat releases easily from the grate.

  4. Transition to indirect heat

    If the food needs more time to cook through, slide it to the cool side. Close the lid to circulate heat like an oven.
