Crispy Pork Belly
Achieving a glassy, shattered-glass skin on pork belly requires two things: a completely dry surface and a slow, controlled rendering process. By scoring the skin and roasting the meat at a low temperature before finishing it under high heat, you draw out the fat without burning the delicate outer layer.
Patience is your primary ingredient.
The skin must be bone-dry before it enters the oven; if there is any moisture on the surface, it will steam rather than crisp.

What goes in.
- 2 lbpork belly, skin-on
- 2 tbspcoarse sea salt
- 1 tspwhite peppercorns, crushed
- 2 tspwhite vinegar
The Vinegar-Dry Method
Wiping the skin with vinegar cuts through surface oils, and leaving it uncovered in the refrigerator overnight dehydrates the skin to create a rigid, crackling texture.
The method.
Score the skin
Use a sharp knife to cut narrow, parallel lines into the skin, spaced about half an inch apart. Do not cut into the meat; only penetrate the skin and the fat layer beneath.
Dry and season
Pat the skin dry with paper towels. Rub the vinegar over the skin, then sprinkle the coarse salt liberally into the scores. Let it sit in the refrigerator, uncovered, for at least two hours.
Low roast
Preheat the oven to 275°F (135°C). Place the pork on a rack in a roasting pan. Roast for 2.5 hours until the meat is tender enough to pull apart with a fork.
The blast
Remove the pork from the oven. Crank the heat to 450°F (230°C). Return the meat to the oven for 15 to 20 minutes, watching closely. The skin will blister and bubble into a golden, rigid crust.

Five-Spice Rub
Rub the meat side (not the skin) with a mixture of Chinese five-spice and brown sugar before roasting.
Soy Glaze
Brush a reduction of soy sauce, ginger, and honey onto the meat side after roasting, being careful not to let the glaze touch the crispy skin.
When it doesn't go to plan.
If the skin is not browning evenly during the final blast, rotate the pan halfway through.
Do not tent the pork with foil during the low roast; steam will soften the skin.
Use a serrated knife to carve; it will prevent the delicate crackling from shattering unevenly.

Why did my skin turn out chewy instead of crispy?
The skin likely retained moisture or the final heat blast was not high enough. Always ensure the skin is fridge-dried and the oven is fully preheated to the higher temperature before the final stage.
Can I prep this in advance?
You can complete the scoring, salting, and drying steps up to 24 hours in advance. Keep it uncovered in the fridge to ensure maximum dehydration.
