Cajun Boiled Crawfish
This is a social event as much as it is a meal. The goal is to get enough spice into the shell that your fingers burn by the time you've finished the pile.
Check your ventilation and your patience.
Ensure you have a propane burner capable of handling a 60-quart pot. The water must be at a rolling boil before the crawfish hit the pot, or they will turn to mush.
- 60-quart stockpot with basket

- Large ice chest for soaking
What goes in.
- 30 lblive crawfish
- 5 lbsmall red potatoes
- 6 headsgarlic, halved horizontally
- 12corn on the cob, shucked and halved
- 2 lbandouille sausage, sliced into 2-inch chunks
- 2 lbsCajun seafood boil seasoning (powder)
- 1 quartliquid crab boil
- 1 cupcayenne pepper (adjust for heat tolerance)
Don't rush the cooling phase.
The flavor doesn't penetrate the meat during the boil; it happens while the water cools down. If you pull them too early, you'll have hot, flavorless crawfish.
The method.
Purge the crawfish
Dump them into a large tub of clean, cold water. Stir them around, drain, and repeat until the water runs clear. Discard any that are already dead.
Season the water
Fill your pot halfway with water. Add the powder, liquid boil, garlic, and cayenne. Bring to a rolling boil over high heat.
Boil the aromatics
Add potatoes, sausage, and corn to the pot. Boil for 10 minutes to give them a head start.
Add the crawfish
Drop the crawfish into the boiling water. Use the paddle to submerge them completely. Once the water returns to a boil, time it for 5 minutes.
The Soak
Kill the flame immediately. Add a bag of ice to the pot to shock the temperature down and stop the cooking. Let them soak for 20 minutes before testing for flavor.

Mushroom Addition
Add 2 lbs of whole button mushrooms during the final 10 minutes of the soak for a sponge-like texture that holds the brine.
Citrus Infusion
Add halved lemons directly into the boil for a bright acidity that cuts through the salt.
When it doesn't go to plan.
Always check the crawfish are live before they go in the pot; if the tail doesn't curl when you pick them up, toss them.
Wear kitchen gloves when handling the finished crawfish if you have sensitive skin, as the seasoning will linger.
Use an ice chest to hold the finished batch; it keeps them warm and allows them to continue marinating in their own juices.

How do I know when they are done?
The shells will be a deep, vibrant red and the tails will be firm, not mushy. If the tail meat sticks to the shell when you peel it, the cook was likely too short.
Can I reuse the seasoned water?
It is better to start fresh for each batch to maintain the integrity of the heat levels.
