The method.

  1. Preheat oven

    Set your oven to 325°F. Line a rimmed baking sheet with parchment paper.

  2. Season the nuts

    Place all nuts in a bowl. Drizzle with oil and toss until each piece is glossy. Sprinkle with salt and pepper, tossing again to coat evenly.

  3. Arrange the tray

    Spread the nuts in a single layer on the baking sheet. Do not crowd them; they need space for the air to circulate.

  4. Roast

    Bake for 12 to 15 minutes. Shake the pan halfway through to ensure even browning.

  5. Cool completely

    Remove from the oven and let them sit on the pan until cold. They will firm up as the oil cools.
