Dip the edges of your cutter into flour between every single cut. To transfer the dough, use a thin offset spatula to lift the shaped man rather than pulling at his limbs, which prevents stretching.

Step by step

The method.

  1. Whisk the dry

    Combine flour, ginger, cinnamon, cloves, baking soda, and salt in a bowl. Set aside.

  2. Cream the fats and sugar

    Beat the butter and brown sugar until the mixture is light and aerated. Add the molasses and egg, beating until fully incorporated.

  3. Form the dough

    Gradually add the dry ingredients to the wet. Stop mixing as soon as the flour disappears; overworking the dough makes the cookies tough.

  4. Chill thoroughly

    Divide the dough into two disks, wrap them tightly in plastic, and refrigerate for at least 90 minutes.

  5. Roll and cut

    On a lightly floured surface, roll the dough to exactly 1/4 inch thickness. Cut your shapes and place them on the lined sheets.

  6. Bake

    Bake at 350°F (175°C) for 10 to 12 minutes. The edges should feel firm to the touch, but the centers should remain slightly soft.

  7. Cool

    Let the cookies sit on the hot sheet for 5 minutes before moving them to a wire rack to cool completely.
