Sturdy Gingerbread Cookies
These cookies rely on a high ratio of flour to moisture, which keeps the edges sharp and the surfaces smooth for icing. They will snap cleanly when broken rather than bending.
Patience is a structural component.
If you try to roll the dough while it is warm, it will stick to your counter and lose its crispness. Keep the dough chilled until the moment you roll.

What goes in.
- 3 ½ cupsall-purpose flour
- 1 tspbaking soda
- 2 tspground ginger
- 1 tspground cinnamon
- ½ tspground cloves
- ½ tspsalt
- ¾ cupunsalted butter, softened
- ½ cupdark brown sugar, packed
- ½ cupunsulphured molasses
- 1large egg
Managing the starch structure
Dividing the dough into discs before wrapping and chilling allows for even temperature distribution. Cold fat prevents the cookies from spreading in the heat of the oven.
The method.
Whisk dry ingredients
Sift the flour, baking soda, and spices into a medium bowl. Combine thoroughly to ensure the spices are evenly dispersed.
Cream the base
Beat the butter and brown sugar on medium speed until the mixture looks like wet sand, then add the molasses and egg, scraping the bowl until the color is uniform.
Incorporate flour
Add the flour mixture in three batches, mixing on low just until the last streaks of white disappear. Overworking the dough here will make the cookies tough.
Chill
Divide dough into two discs, wrap in plastic, and refrigerate for at least two hours.
Roll and cut
Roll the dough between two sheets of parchment paper to a thickness of 1/8 inch. Use your cutters and lift the shapes with a flat spatula to preserve their edges.
Bake
Bake at 350°F (175°C) for 10-12 minutes. The edges should be firm and slightly darker than the centers.

Replace 1/4 cup of the flour with Dutch-processed cocoa powder for a deeper, earthier profile.

Add the zest of one whole lemon to the creamed butter to provide a sharp contrast to the deep molasses flavor.

Use parchment paper for rolling to avoid adding extra flour to the dough, which can turn it dry.
If the kitchen is warm, rotate your baking sheets halfway through the bake to compensate for hot spots in the oven.

Why did my cookies lose their shape?
The dough was likely too warm when it entered the oven. If your shapes look soft after cutting, put the cut-out tray into the freezer for 10 minutes before baking.
Can I use blackstrap molasses?
Avoid it; the flavor is bitter and will overwhelm the ginger. Use standard baking molasses.
