The method.

  1. Prepare the dough

  3. Cook the cream

    Whisk sugar, cornstarch, and yolks in a bowl. Bring milk to a simmer in a saucepan, then slowly drizzle half into the eggs. Pour everything back into the pan, whisking constantly until it thickens into a glossy pudding.

  4. Chill components

    Press plastic wrap directly onto the surface of the custard to prevent a skin from forming. Chill both the crust and the custard until completely cold.

  5. Assemble

    Spread the cream into the crust. Arrange the fruit in concentric circles, starting from the outside edge and working toward the center.
