The method.

  1. Prep the pan

    Place eggs and sugar in the mixer bowl. Beat on high speed for 8 to 10 minutes until the mixture is tripled in volume and pale yellow.

  3. Fold the flour

    Sift the flour over the egg mixture in three additions. Using a spatula, fold gently by cutting down the center and sweeping up the sides, turning the bowl as you go.

  4. Incorporate butter

    Drizzle the cooled butter and vanilla down the side of the bowl. Fold just enough to combine; do not over-mix or the air bubbles will pop.

    Pour into the prepared pan. Bake at 350°F (175°C) for 25 to 30 minutes. The cake is done when the top springs back when pressed gently and the edges begin to pull away from the pan.
