The Chill-Before-Bake Method

Firming the cut shapes in the refrigerator for at least 30 minutes before baking solidifies the butter, ensuring the edges stay crisp and the height remains uniform while in the oven.

Step by step

The method.

  1. Cream the butter and sugar

    Beat the butter and sugar only until just combined and smooth. Do not aerate or whip too much air into the mixture, as this causes the biscuits to collapse during baking.

  2. Incorporate dry ingredients

    Add the flour and salt. Mix by hand or on the lowest speed of a mixer until the dough just comes together into a shaggy mass. Stop as soon as you see no loose flour.

  3. Roll to measure

    Place the dough between two sheets of parchment paper. Roll out until it is exactly 1/4 inch thick. Use wooden spacers or thick coasters on either side of the dough to guide your rolling pin.

  4. Chill and cut

    Refrigerate the flat sheet of dough for 30 minutes. Use a sharp knife to cut into uniform squares or rectangles while the dough is firm. Transfer the pieces to a lined baking sheet with at least an inch between them.

  5. Bake

    Bake at 325°F (160°C) until the bottom edges are barely golden and the centers are set. This takes 18–22 minutes. Rotate the tray halfway through.
