Feijoada is not a recipe. It is a Saturday. It begins the day before with the beans soaking, and it ends hours after the last bowl when someone is still sitting at the table because they do not want to leave yet. This is the point of it. The dish exists to keep people at the table.
I am not going to give you a shortcut to feijoada. There are no shortcuts. The beans need the time. The pork needs the time. The whole project needs the kind of Friday-afternoon commitment that has, I am told, become unfashionable. I do not care. Make it anyway. It will outlast any fashionable thing you have eaten this year.
Haiti gives us griot — fried pork shoulder marinated in citrus and scotch bonnet, cooked low and then finished hard in hot oil until the outside shatters and the inside stays somewhere between braised and pulled. It is extraordinary and it is much faster than the feijoada, which makes it the ideal accompaniment. While the beans are doing their slow work, the griot comes together.

- For the feijoada:
- 500g dried black beans, soaked overnight in cold water
- 400g smoked pork sausage (linguiça or chouriço), cut into rounds
- 300g smoked pork ribs, cut into sections
- 200g thick-cut bacon, cut into lardons
- 1 large white onion, diced
- 6 garlic cloves, minced
- 2 bay leaves
- 1 tbsp lard or neutral oil
- salt to taste
- To serve alongside:
- white rice, steamed
- farofa (toasted cassava flour — in a dry pan with butter until golden and nutty)
- orange slices
- finely sliced raw chilli or hot sauce
- braised collard greens (kale works)
- For the griot (Haitian pork):
- 1kg pork shoulder, cut into large chunks (7-8cm)
- juice of 3 sour oranges (or 2 regular oranges + 1 lime)
- juice of 1 lemon
- 1 scotch bonnet, pierced (not cut — you want heat, not violence)
- 4 spring onions, bruised
- 4 garlic cloves, minced
- 1 tsp dried thyme
- salt and black pepper
- neutral oil for frying

- The night before: drain and rinse the soaked beans. Combine with the smoked ribs in a large pot, cover with cold water by 5cm. Bring to a boil, skim the foam that rises — and it will rise, and it is important to remove it. Reduce to a low simmer and cook for 90 minutes, partially covered.
- In a separate pan, render the bacon in the lard over medium heat until crisp. Add the onion and cook 10 minutes. Add the garlic, cook 2 more minutes. Add the sausage rounds. Cook until lightly browned. Add this entire mixture to the bean pot.
- Add the bay leaves. Season with salt. Continue simmering, partially covered, for another 60-90 minutes. The beans should be completely tender and the broth thick and almost stew-like. If it is too thin, mash a ladleful of beans against the side of the pot and stir back in.
- For the griot: the day before or morning of, combine the pork with the citrus juices, scotch bonnet, spring onions, garlic, thyme, salt, and pepper. Marinate at minimum 3 hours, ideally overnight.
- Transfer the pork and all its marinade to a pot. Add just enough water to barely cover. Bring to a boil, then reduce to a firm simmer. Cook uncovered for 45-60 minutes until the liquid has almost completely reduced and the pork is tender throughout.
- Remove the scotch bonnet. Increase heat to high. Let any remaining liquid caramelize against the bottom of the pan — this is where the flavor concentrates. When the pan is nearly dry and the pork is starting to color in the fat that has rendered out, add a splash of neutral oil and fry the pork pieces in the pan, turning, until the exterior is deeply browned and some edges are beginning to crisp.
- Serve everything at once: feijoada in the pot at the center of the table, rice, farofa, orange slices, greens. The griot in its own bowl. People eat in the order and combination they prefer. That is the point.
Why you skim — and what happens if you don't
The grey-brown foam that rises during the first 20 minutes of cooking beans is primarily protein and starch from the bean skin, along with any impurities from the meat. It is not harmful but it will make your broth taste muddy and flat rather than clean and deep. Skimming it takes five minutes and changes the final flavor in a way that is immediately noticeable. Use a ladle and a bowl of cold water to rinse the ladle between passes. You are looking for grey foam, not the white starch foam that appears later — that second foam can stay.
On farofa: Toast the cassava flour in butter until it smells nutty and looks like wet sand beginning to dry. It should crunch slightly. It is not decoration — it is the textural counterpoint the stew needs.

Why black beans and pork fat belong together.
Black beans have a flavor that is earthy, slightly mineral, and muted on their own. What transforms them is fat — specifically the rendered pork fat from the smoked meats, which carries flavor compounds that are fat-soluble and deposits them throughout the bean stew over hours of slow cooking. The smokiness of the linguiça and ribs is not an addition to the beans — it becomes the beans.
The orange slices served alongside are not garnish. The acid cuts the fat of the pork and the heaviness of the beans, resetting your palate between bites. Brazilians arrived at this combination through generations of experience, not through chemistry textbooks. The result is the same either way.
Haitian griot works on a different principle: the citrus marinade denatures the surface protein of the pork before it hits the heat, giving you a head start on tenderness. Then the braising dissolves the collagen, and the final fry creates the crust the dish requires. Three cooking methods, one piece of pork.
