The method.

  1. Toast the spices

    Place the mustard seeds in the dry saucepan over medium heat until they begin to pop.

  2. Combine the base

    Add the vinegar, sugar, ginger, and salt. Stir until the sugar dissolves into a bubbling syrup.

  3. Add the fruit

    Fold in the diced mangoes and chili flakes. Lower the heat to medium-low.

  4. Simmer

    Cook uncovered for 25 to 30 minutes. Stir occasionally, pressing lightly on the mango pieces to help them break down slightly while leaving others intact.

  5. Cool and store

    Remove from heat once the mixture is thick. Let it cool completely in the pan before transferring to a glass jar.
